Easy Chocolate Meringues

I used to be terrified of making meringues but they are so very simple and so very easy and SO delicious. They are also rather hardy and lots of combinations can be used with the egg whites. I use chocolate because it’s a lovely ingredient to use and absolutely delicious. This recipe makes 8 lovely meringues.

Easy Chocolate Meringues

Ingredients

  • 4 egg whites (from Clarence Court)

  • 1/4 tsp white wine vinegar

  • 3 tbsp caster sugar

  • 70g dark chocolate from Valrhona from Classic Deli

  • Dried Raspberries (optional)

Method

  1. Preheat the oven to 100°C

  2. In a stand mixer, add in your egg whites and mix on a medium speed until you start to get soft peaks. At this point, add in your sugar little by little.

  3. Melt your chocolate.

  4. Keep whisking until your peaks are harder and then add in your white wine vinegar and keep whisking until very stiff.

  5. Take off of the mix and add in your chocolate and use a spoon or spatula to fold the chocolate but don’t over mix it.

  6. Spoon your meringue mix on to a baking tray lined with parchment and bake in the oven for 60 minutes.

  7. When you get to 60 minutes, turn off your oven and leave your meringues in there for a further 15 minutes until cooler as you don’t want them to flatten.

  8. Serve with melted chocolate and dried raspberries.
