Gingerbread Caramel Vegan S'mores Hot chocolate
Phew! The title of this makes it sound like a mission but I promise you it isn’t and it is SUCH a delicious comforting drink that I promise that when you make it once, you’ll make it again and again… and again. All you need is two pans and a couple of mugs and be ready to have lots of fun!
Ingredients
200ml chocolate oat drink from Oatly
50g Dark chocolate (vegan)
4 tbsp soft brown sugar
3 tbsp mini marshmallows from freedom mallows
3 tbsp molasses sugar
100ml vegan cream from Alpro
50g vegan butter from Flora
1.2 tsp sea salt
1/2 tsp cinnamon and 1 tsp ground ginger
Method
In a pan, combine your molasses sugar, brown sugar and 20 ml cold water and heat until the sugar has dissolved and then bring to a boil.
Slowly whisk in your butter little by little and then add in your cream, spices and salt and whisk continuously as the caramel will rise. Leave to cool and set completely before putting 203 tbsp of the syrup into the bottom of your mug and on a low heat in a pan, melt your chocolate with your Oatly chocolate milk and then add in your marshmallows until melted.
Pour into your mugs and top with vegan whipped cream, more of your caramel and a few more marshmallows
