Apple Cider Doughnuts

Apple Cider Vinegar is one of those ingredients that in my opinion, should always be a staple ingredient in the cupboard. I love it. I love it in smoothies, with water, on it’s own if I need a pick me up, it makes a fabulous hair conditioner but it also makes truly wonderful bakes.

It tastes incredible within a cake and even better within a doughnut and tastes just like apple. It’s perfect and it simply reminds me of cosy nights in with a Christmas film on the go.

The other great thing about them is that they aren’t hard to make and they are BAKED. Yep… These are baked doughnuts so all you need is a doughnut pan or a ring pan and get making.

Ingredients For Doughnuts

  • 100ml Apple Cider Vinegar (reduced to 50ml)

  • 240g Plain Flour

  • 2 tbsp Brown Sugar

  • 1 tbsp Honey

  • 1 tbsp Lemon Juice

  • 1 tbsp Vanilla Extract

  • 1 tsp cinnamon powder

  • 1/2 tsp ground nutmeg

  • 1/4 tsp cardamom powder

  • 1 pinch of cloves powder

  • 1/2 tsp ginger powder

  • 1 tsp baking powder

  • 1/2 tsp Bicarbonate Soda

  • 80g Flora butter

  • 1 Free range organic egg

  • 60 ml Oat Milk

Ingredients For Doughnuts

  1. In a saucepan pour in your apple cider vinegar along with your honey and your lemon juice and stir on a medium heat until it is reduced to half the liquid and leave to cool.

  2. Spray a doughnut pan or a ring tray with oil or melt some butter to grease the tray. I use a ring tray from Lakeland which gives me smaller doughnuts but they’re slightly thicker.

  3. In a bowl, mix your flour, spices, baking powder & soda and leave to the side.

  4. In saucepan, melt your butter on a low heat then take off the heat. At this point add in your apple cider vinegar, milk, vanilla and brown sugar and stir until fully combined and the sugar has just started to melt and then add in your egg.

  5. Pour your wet ingredients into the bowl with all of your dry ingredients and stir until just combined. You don’t want to over mix your batter.

  6. Use a tsp to add in your batter until they just reach the top of the mould, they will rise a tad in the oven.

  7. Bake for 8 minutes until slightly tanned in colour and serve with cinnamon sugar.
