Toffee Apple Mini Pies

Whilst it is super easy to just get yourself a ready rolled shortcrust pastry, one of my favourite, most relaxing things to do is to make my own pastry. The issue with shop bought is although it’s easy to use, you are limited to its size and sometimes you’ll need more which means it’s an added cost.

Shortcrust pastry is easy to make, you just need to have a bit of time to dedicate to it.

Toffee Apple Mini Pies

Ingredients

  • 210g Plain flour

  • 110g Butter diced (for the pastry)

  • Pinch salt

  • 5 tbsp Cold water

  • 2 Bramley apples (peeled, cored and diced into small pieces)

  • 100g Butter (for the apples)

  • 1 tsp Cinnamon

  • 50ml Vegan Cream from Alpro

  • 4 tbsp Brown Sugar

  • 2 tbsp Melted butter (for the pastry)

Method

  1. Sift your plain flour into a bowl. If you have a stand mixer, use the paddle attachment and add your diced butter and place on a medium speed until a breadcrumb texture is formed. If you don’t have a stand mixer, rub in with your fingertips until a breadcrumb texture is formed.

  1. Add in your pinch of salt, then add in your water. I find 5tbsp is enough to use.

  2. Knead the dough in the bowl then place on to a hard floured surface and knead a little more until a hard dough is formed. Wrap in cling film and pop in the fridge for 20 minutes.

  3. In a saucepan, add your butter and melt on a low heat for a minute before adding in your brown sugar and your cream and let the brown sugar dissolve completely.

  4. Stir only a few times and when it starts to thicken, add in your apples and your cinnamon and cook for 3 minutes so your apples are just started to cook then leave to the side.

  5. Get your pastry out of the fridge and leave to come back to room temperature for 10 minutes or so.

  6. Roll out your pastry and cut out 6 equal circles and on a baking tray with parchment lay three of your pastry circles and place your apple mix on top (around 2-3 tbsp) and then use your melted butter around the edges and then cover with your remaining pastry circle. Use a fork to form it together.

  7. You can make any pattern you like at this stage.

  8. Sprinkle with granulated sugar and bake in the oven for 25 minutes until golden brown and enjoy warm with cream.
