Linzer Cookies

Christmas is all about baking and in my opinion, making a bit of mess and having a great time. That’s what baking is all about for me and these Linzer cookies do just that and they are SO perfect for baking with children. They are fun, they require a tiny bit of thinking but other than that - they’re a joy to make and make the perfect little hand made gift.

Linzer Cookies

Ingredients

  • 180g Butter (Flora)

  • 100g Caster Sugar

  • 180g Plain Flour

  • 80g Ground Almonds

  • 1 tsp Vanilla extract

  • 1 egg yolk (Organic, Free Range)

  • Jam of choice for filling or Nutella.

  • Powdered Sugar for decorating

Method

  1. In a stand mixer, mix your butter, sugar and vanilla extract until light and fluffy. Then add in your egg yolk.

  2. In another bowl, mix your flour and almonds and then pour in slowly to your butter and sugar mix. Beat until a dough is formed.

  3. Cut your dough in half and wrap in a tea towel and pop in the fridge for 30 minutes/

  4. Remove the dough from the fridge, it should be ready to roll but if it’s a bit too hard, leave it for a few minutes.

  5. On a floured surface, roll out one of your dough balls and cut out between 15-19 cookies using whatever cookie cutter you like and pop on to a baking tray with parchment on it. Place in the fridge for half an hour.

  6. Whilst your dough is in the fridge, roll out your other dough and cut a further 15-19 cookies using the same cookie cutter and place on a sheet with parchment. Use the end of a piping nozzle to cut out holes in the middle or use a smaller cookie cutter of choice.

  7. Pop this tray into the fridge and take the other one out.

  8. Bake in a preheated oven at 180c for 12-13 minutes until just starting to turn a pale golden.

  9. Repeat with the other batch.

  10. Once cooled, sprinkle over your powdered sugar on the cookies with the holes in and leave to the side and place a dollop of jam or choice of spread on the middle of the other cookie.

  11. Gently place your linzer cookie with the powdered sugar on top so that the jam seeps through the hole and enjoy.
