Brown Butter Caramel Apples

Winter is a time when all we really need is happy flavours that make us smile. For me, it is this. Warm, comforting apples marinated in brown butter , sugars and spices before cooked on a low heat. This is a delicious recipe and if you want to eat it as it is then you crack on, otherwise it is very simple to turn into a beautiful crumble.

Ingredients

  • 100g plant based butter (I use flora)

  • 4 Braeburn apples (peeled, cored and sliced)

  • 4 tbsp brown sugar

  • 2 tbsp vanilla extract

  • 3 tbsp Dark Maple Syrup

  • 50ml Apple Juice

  • 2 tsp Lemon juice

  • 1/2 tsp rock salt

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp cloves

Method

  1. Turn your oven to 180c and leave to preheat

  2. In a bowl, mix your apple juice and your lemon juice together and leave to the side and then place your peeled apples into the bowl, stir and leave to the side.

  3. In a saucepan, melt your butter with your salt on a low heat for up to 5 minutes until the butter becomes a brown in colour and turns deliciously nutty in scent.

  4. When your butter is ready, add in your sugar and stir until melted then add in your maple and vanilla extract and stir for one minute.

  5. Add in your spices and apple and lemon juice and stir constantly for 1 minute until your sauce starts to thicken.

  6. Place your apples into a dish and pour your caramel mixture over the top of them and bake in the oven for 20-25 minutes until your apples are sticky and a thick sauce is underneath them.

  7. Serve with cream
