Miso and Parsley Buttered Corn Cobs

It’s corn season and one of my favourite seasons. I am very lucky to live quite close to a corn field and really do love them fresh from the husk. There are countless ways you can prepare your corn on the cob from boiling to BBQ but I like mine nice and simple - wrapped in a bit of foil and baked slowly. Simple is always best for me.

Ingredients

  • 3-4 corn on the cobs

  • 2 tbsp brown miso

  • 6 tbsp butter

  • 1/4 tsp sea salt

  • Chopped parsley

Method

  1. Turn your oven to 180º and line a baking tray with 3-4 strips of foil.

  2. Remove your corn from the husk and rinse with cold water. Lay your corn individually in its own foil wrap and in a bowl, mix your butter with your miso, salt and parsley and paint on your corn generously with a brush.

  3. Cover your cobs with the foil and make sure none of your cobs are showing.

  4. Bake in the oven for 20 minutes until just tender and enjoy.
