Sweetcorn and Piquanté Pepper Fritters

Snack time is the best kinda time and today it’s these utterly delicious sweetcorn fritters that take less than 20 minutes to make from prep to belly! SO easy and super delicious! I find nothing more comforting than sweetcorn fritters for lunch, they’re a mixture of sweet and savoury and there are so many variations you can have with them. For me, I love the sharp tang of the piquanté peppers to compliment the sweetness of the corn.

Sweetcorn fritters

Ingredients

  • 1 440g tin of sweetcorn (drained)

  • 10 piquanté peppers (chopped)

  • 1tsp garlic powder

  • 1tsp of salt and ground black pepper

  • 1 duck egg from Clarence Court

  • 70g plain flour

  • 25ml oat milk from Oatly

Method

Pop your sweetcorn and your piquanté peppers into a bowl and stir fully. Beat your eggs and then add in your milk and beat again.

Pour this over the sweetcorn mix and season with your garlic, salt and pepper. Then lastly, add in your plain flour and stir until combined. It will look wet but don’t worry, perfectly normal.

Heat your oil (vegetable oil is best) and pop 2 tbsp of batter per sweetcorn fritter and fry for 2 minutes on each side until golden.

Pop on to a kitchen towel or kitchen paper to remove any oil and then enjoy with sour cream and dill.
