Spinach, Cheese and Green Pea Mini Pies

That was quite the mouthful (literally) but boy oh boy are these little pies an absolute treat. All you need to get creative with this is a 6 deep hole muffin pan and some puff pastry and you’re golden. This recipe was actually one of those “what do we have in the fridge that we can use up” kinda deal and it’s so delicious. I am a little bit obsessed with this recipe, especially with a bit of gravy on the side.


Ingredients

  • 1 puff pastry roll

  • 3 cubes of frozen spinach

  • 1 tbsp flora butter

  • 4 garlic cloves (minced)

  • 70g green peas

  • 30g grated mature cheddar cheese

  • 1 tsp plain flour

  • 80ml oat milk

  • 1/4 tsp of salt and pepper

Method

  • Turn your oven to 180C to preheat

  • Cut your puff pastry into 6 squares and butter a 6 hole muffin tray. Each square should fit perfectly within the hole ready for the remaining pastry to be folded over the pie mixture. Put to the side

  • In a saucepan, melt your butter and then add in your flour and your milk and stir until a thick creamy paste is made (also known as a roux) then add in your cheese. Stir in your frozen spinach, your minced garlic and your salt and pepper.

  • Stir on a low heat until your spinach cooks through. Then add in your peas and stir through until just combined.

  • Once cooked through fill each muffin hole pie with 1.5 tbsp of mixture until all pies have their filling then fold over the pastry.

  • Use a dash of oat milk to glaze the pastry then cook in the oven for 25 minutes until golden.
