Easy Tomato and Burrata Salad
Whilst this is very much a summer dish, sometimes you just need a salad that is simple and delicious and takes less than 5 minutes to throw together and that can happen at any time of the year. For me the flavours of beautifully ripened market vine tomatoes are unbeatable.
I don’t shop for my veg at supermarkets because I hate the plastic pollution and market fruit and veg is always so much cheaper (and fresher) plus I really love supporting small local businesses so make a point of making my shop go further with a good market visit.
There are always such a lovely variety of fruit and veg on offer too, especially seasonal choices.
This salad is one of those classics, easy and simple but will be guaranteed to put a smile on your face.
Ingredients
2 large vine tomatoes
1 burrata
Basil
1 tbsp Olive Oil
Method
Slice your tomatoes (not too thinly) and cover with your olive oil then layer with your burrata and your basil.
You can use other ingredients like a sprinkling of smoked salt, black pepper or even balsamic but sometimes you just want something super fresh and simple.
