Roasted Tomato and Basil Soup

What can you say? Tomato and basil soup is not only a classic but it is super healthy, rich in vitamins and nutrients and a proper comforting bowl of yum on a cold winters day.

Ingredients

  • 7 Large vine tomatoes

  • 3 tbsp olive oil

  • 5 garlic cloves

  • 1 tbsp thyme

  • 6 basil leaves

  • 1 tsp salt & 1 tsp cracked black pepper

Method

Roast your tomatoes, garlic, olive oil and thyme on a very low heat for 1 hour until the skin is peeling off. Pop everything into a blender along with the basil and blend until smooth and serve. Super simple, very fresh and very hearty.
