Lemon Cacio E Pepe
For me, there is nothing more comforting than a bowl of delicious pasta covered in pepper and cheese. It’s simple, incredibly hearty and packed full to the brim of all of the comforting flavours we love so much.
Ingredients
100g spaghetti
3 tbsp lemon cracked black pepper
2 tbsp lemon juice
100g vegetarian parmesan (grated)
3 tbsp butter (from flora)
3 tbsp olive oil
A sprinkling of chilli flakes
Method
Boil a pan of salted water (be generous with the salt) and bring to a boil. Add in your pasta and cook until just tender.
Whilst your pasta is boiling, in a small saucepan add in your butter, olive oil, lemon juice, pepper, a sprinkling of chilli flakes and 4 tbsp of salted pasta water. Cook on a low heat until melted and then add in your cheese. Cook until the cheese is creamy and melted and then drain your pasta and stir through.
