Lemon Cacio E Pepe

For me, there is nothing more comforting than a bowl of delicious pasta covered in pepper and cheese. It’s simple, incredibly hearty and packed full to the brim of all of the comforting flavours we love so much.

Ingredients

  • 100g spaghetti

  • 3 tbsp lemon cracked black pepper

  • 2 tbsp lemon juice

  • 100g vegetarian parmesan (grated)

  • 3 tbsp butter (from flora)

  • 3 tbsp olive oil

  • A sprinkling of chilli flakes

Method

  • Boil a pan of salted water (be generous with the salt) and bring to a boil. Add in your pasta and cook until just tender.

  • Whilst your pasta is boiling, in a small saucepan add in your butter, olive oil, lemon juice, pepper, a sprinkling of chilli flakes and 4 tbsp of salted pasta water. Cook on a low heat until melted and then add in your cheese. Cook until the cheese is creamy and melted and then drain your pasta and stir through.
