Marmite Mac and Cheese

So, marmite… It’s a love hate relationship that many experience but for me, I absolutely lovely it and what’s better than pasta and cheese? Added marmite of course. So, I challenge all of you marmite lovers and marmite haters to dive in and give it a go - I guarantee it’s a mac and cheese gamechanger.

Marmite Mac and Cheese

Ingredients

  • 40g dairy free butter from Flora

  • plain flour

  • vintage tickler cheddar

  • 3 tsp marmite

  • 2 tsp of This is Not Grated Cheese - Italian Style from Plant Based cheese at @waitroseandpartnerspr

  • 70g pasta

  • 1 tsp mustard powder

  • 200ml milk (I use oatly)

Method

  • Pop a salted pan of water on to boil and then add in your pasta and cook until tender.

  • Whilst this is cooking, Melt your butter then whisk in your flour quickly to create a thick paste also known as a roux.

  • Add in your milk little by little (not all in one go) and keep stirring until you get a lovely thick creamy sauce texture.

  • Add in your marmite and then your mustard powder and stir until combined - taste test here and add more or less in depending on your taste.

  • Then add in your grated vintage cheese and stir on a low heat.

  • Add in a tbsp of pasta water to the sauce and then drain, adding in your pasta to your sauce and serve with a sprinkling of hard cheese
