Roasted Honey Plums with Honey Mascarpone and Pistachios

I love crusty sourdough bread and this gorgeous sticky, jammy, sweet delight is such a treasure on honey mascarpone sourdough. It’s so easy to make and a real brunch dream.

Roasted Honey Plums with Honey Mascarpone and Pistachios

Ingredients

  • 6 plums (ripened the better)

  • 1 tbsp olive oil

  • 1.5 tbsp plant based butter

  • 2 tbsp apple cider vinegar

  • 3 tbsp honey

  • 2 slices of thick sourdough

  • 10 crushed pistachios

  • 3 tbs mascarpone

Method

  1. Turn your oven to 180c and slice your plums in half, removing the stone and place in a small oven proof dish.

  2. Drizzle with your honey (leave some for the mascarpone), ACV, butter and olive oil and bake for 10 minutes until soft.

  3. Remove 4 plums from the oven but keep 2 in for an extra 5-7 minutes so it’s nice and jammy.

  4. Toast your sourdough and then layer with your honey mascarpone then layer on your plum jam and your whole plums.

  5. Drizzle any remaining plum juice over the toast and sprinkle your pistachios on top and enjoy.
